Research progress of risk assessment subgroup on quantitative risk assessment model of Salmonella contamination for the broiler chicken supply chain

The parameters on environmental, processing, bacterial prevalence and contamination level of broiler supply chain were collected from 2016 to 2019. A quantitative risk assessment model of Salmonella contamination for the broiler chicken supply chain was constructed to predict the risk of illness in yellow-feathered broilers. The model estimated that the mean predicted probability of illness per serving was 1.1×10-8. Full cooking, reducing farm contamination, chlorine concentrations in chilling and cross-contamination in wholesale were the most significant factors in reducing the health risk. Scenario analysis indicated that post-evisceration spraying could result in the greatest relative risk reduction.
